Since the winter is actually announced again here in Switzerland, I treat myself with a whole plate full of spring. This spring salad tastes fresh and crisp and is prepared in no time.
Spring Salad with pomegranate dressing

Zutaten
- Fresh watercress
- Sprouting mix
- Fresh green peas
- Fresh peppermint
- Formagini Ticinesi or any fresh slightly salted cheese
- 4 tablespoons olive oil
- 1-2 pomegranate molasses
- salt
- lemon zests
Zubereitung
- Wash salad
- peel the green peas
- chop the peppermint
- For the dressing just mix 4 tablespoons olive oil, 1-2 pomegranate molasses, salt and some lemon zests and add it to the salad.
Tipp: you can mix any green leaves with all sorts of sprouts or even add pomegranate seeds, chickpeas or nuts to the salad.
